Until recently, I always thought that eating healthy is so boring.
Especially for breakfast, I struggle with what I can have. Growing up in The Philippines where breakfasts are usually a heavy fatty heal, and now being married which means that my weekend mornings are for feasting on prosciutto, formaggio, frittata and pane, it is always not easy to choose the "healthier boring option".
But after being inspired to live a healthier lifestyle, I needed to think of an option that is bursting of health goodness, but still does not compromise taste and flavors.
And that starts my obsession with Coco Chia, which acts as the base for different variations.
What you need...
5 tablespoons Chia Seeds
Coconut Milk (depends on the texture that you want - but should be more than the chia)
What to do...
Soak the Chia in the coconut milk overnight in a tight container.
The seeds turn absorb the milk, and turn into like tapioca pearls.
If you find it too dry, you may still add more milk.
Depends on the taste and texture that you want.
Top with the berries and almonds.
